Breakfast Muffins

In an effort to get caught up on various things around the house, I've streamlined my Breakfast Muffin recipe. Before, I made the reduced fat biscuits myself....this time I took a short cut and used Pilsbury Grands Homestyle Buttermilk Reduced Fat Biscuits. The store bought kind are higher in Weight Watchers Points, but they do have a lot more volume and result in a much larger muffin. I'd say this short cut is a keeper!

Reduced Fat Breakfast Muffins

Press one Pilsbury Grands Homestyle Buttermilk Reduced Fat Biscuit into each cup of a well greased muffin tin, making a bowl out of the biscuit.

Into each bowl, place:
1 tablespoon Jimmy Dean Turkey Sausage Crumbles (precooked)
1 tablespoon Egg Beaters
1 teaspoon reduced fat cheese (I used a sharp cheddar)

Bake at 400F for 15-20 minutes, until the biscuits are golden brown.

I freeze these and just grab one and pop it in the microwave in the morning for a quick breakfast on the go.
